Idalia began by selling pollo a la leña (fire-wood grilled chicken) from her home kitchen to those around her, always with a smile on her face. Her food was so delicious that it wasn't long before she decided to take a leap of faith and start her own restaurant. Eight years ago, she opened La Casa del Pollo Loco in a small location, with just five items on the menu, and soon the community fell in love with Idalia's food and her spirit.
